I was at a Pampered Chef party recently and the demonstrator made this recipe for everyone to taste. It was very good! And as all of my recipes are, this is very easy to make! I tweaked this recipe to fit our family, as you can do for yourself! I just couldn’t let this go by without posting and archiving this!
1/2 cup milk
Salt and ground black pepper to taste(optional)
1 cup chopped ham
1/2 cup sliced fresh mushrooms
1/4 cup green onion slices
1/4 cup chopped green bell pepper
1 1/2 cups (6 ounces) shredded cheddar cheese.
1. Preheat oven to 400 degrees. Grease a 9×9 inch pan.
2. For crust, combine potatoes, 1 egg, salt and pepper in classic 2 Qt. batter bowl; mix well. Spread potato mixture into pan; pat down with back of spoon. Bake 10 minutes; remove from oven.
3. For egg topping, whisk eggs and milk in a bowl. Season with salt and pepper, if desired. Microwave on high 3 minutes; stir. Microwave an additonal 3 minutes; stir. Spread cooked egg mixture evenly over potato crust; top with ham, mushrooms, green onion and bell pepper. Sprinkle with cheese.
4. Return to oven. Bake 10 minutes. To serve, cut into wedges with pizza cutter.
*This is the actual pampered chef recipe but as stated prior, I tweaked this and didn’t use mushrooms. I also added some chili powder for spiciness. I didn’t use the ham either, but used turkey sausage instead.*
